Recipe for Lagunitas Censored Ale Stew by Herly – 2

Ingredients

1 Lagunitas Censored Ale or a good copper or brown ale for my international friends
1 pound of Beef roast cubed or stew meat ( lamb works too)
2 Carrots
2 ounces of Flour
5 Red or yukon potatoes quartered
2 cups of Mushrooms, brown, white , wild whichever
1 cup of Onions rough chop
1 tablespoon of Worcestershire sauce
2 ounces of Dried or fresh rosemary, thyme, herbs de provence good pinches of whatever you have. A little sage works too
1 Aseptic box Chicken or beef broth,
Salt pepper
1 ¼ tablespoons of Dijon mustard
2 ounces of If possible, dried mushrooms. Porcini, shitake wild etc. Rich flavor
Procedure

1. This is the first step. Dust meat in flour salt pepper mixture , brown in hot Dutch oven or frying pan w olive or grapeseed canola oil. Pull meat out add to crockpot. Brown onions in the leftover in pan w butter or oil.
Throw in

2. Add chopped carrots potatoes, celery w leaves and mushrooms to crock pot w bottle of beer and broth. If you have a marrow bone even better to throw in there. I use soy sauce like a table spoon instead of salt sometimes. Richer flavor.

3. Cover and cook for 4 hours on high or overnight ( preferable on low)
In morning stir. And here’s the IDEAL. Transfer to a Dutch oven or Le Creuset type of pot. Roast in oven at 350 uncovered for 1/2 hour to let get that beautiful crust and sauce. Serve w rice or buttered noodles. Or big hunks of good bread.
